Chai spiced banana and fig loaf

We sell this one at the markets and after many requests we have decided to share the recipe so you can make it too! It is a great one for lunch boxes, an afternoon snack or something to impress your friends and family.

Ingredients

Makes 1 large loaf

1/2 cup of coconut oil, melted 

1/4 cup honey or sweetener of choice 

1/4 cup of coconut sugar 

3 eggs or 3 flax eggs (3 tablespoons of flax to 2 tablespoons of filtered water)

8 dried figs

1 tsp vanilla powder 

1/2 tsp bicarbonate soda

2 1/2 tsp aluminium free baking powder

1/4 tsp clove powder 

1/2 tsp cinnamon ground

1/2 tsp ground ginger powder 

1/4 tsp ground cardamom

1/4 tsp ground nutmeg 

7 small (300g) ripe bananas (the riper the better)

1/4 cup of greek yogurt (not sweetened) or coconut yogurt  

3/4 cup almond meal

3/4 cup rice flour 

1/2 tsp celtic salt


Method

  1. Preheat oven at 180 degrees. 

  2. In a blender, blend yogurt, 4 bananas, honey and coconut oil. 

  3. In a large bowl whisk almond meal, rice flour and spices until there are no lumps. 

  4. Slice 2 bananas into little cubes and figs into small pieces. (this is so you get little bits of banana and fig throughout the bread... YUM!)

  5. Combine all ingredients, except the 1 banana. 

  6. Place the mix into a loaf shaped tin lined with baking paper. Place sliced bananas over the top.

  7. Cook for about 40 minutes, check after 30 minutes. Place the knife through the centre if knife is still wet, keep in the oven for another 5-10 minutes.
