Almond Tabouli


I have been loving this recipe lately. It really does show off the produce that you use though. I feel this recipe is that good because we use organic. The parsley has been exploding with flavour you really don’t have to do much to make it taste so good. 


1 bunch of fresh parsley 

4 tomatoes preferably hard (fresh) not to soft

1/2 cup of almonds (it also works well with cashews) 

1 lemon (finely grate the zest to get 2 tsp, then juice to get 2 tbsp) 

Salt to taste 

Pepper to taste 


Using either the food or your knife. Chop the almonds up. If you are using a food processor make sure you don’t turn it to almond meal. You want the almond to give the dish texture. 

Finely dice the tomatoes and finely chop the parsley. Add all ingredients to a bowl and serve.
